Mediterranean Avocado Boats

1 tablespoon lime juice
2 ripe avocados, peeled and halved
 ½ teaspoon butter
5 medium eggs, beaten
2 green onions, minced
¼ cup chopped fresh cilantro
4 olives, chopped


  • Pour the lime juice on the avocado halves, and set aside.
  • Melt the butter in a large skillet
  • Mix together the eggs, onions, cilantro, and olives, and place in a large skillet with the butter.
  • Cook for 5 minutes over medium heat. Set aside.
  • Place the cooked egg mixture in the avocado halves. Add salt and pepper. Serve.

Why is this recipe for Stage 2 and not stage 1?? I've read the book and on p. 182 guacamole is why can't this recipe be for stage 1? Just want to make sure I'm following the plan correctly. Thanks!

Here is the nutrition breakdown based on the ingredient list. There are sites out there where you can enter recipes and it will give you the breakdown. 252 kcals is pretty low for one meal. About the same as 1/2 cup of oatmeal made with 1% milk and a smattering of raisins and walnuts.

I just started the diet 2 days ago and am happy with it, but a little confused. I understand that I need moderation, no snacks, and to follow the other rules (organic, full fat etc.) and I and my husband are doing great with that. - but my question is why is this recipe (Mediterranean Avacado Boats) stage 2 and not stage 1? There are no grains, potatos, etc. I would like to understand this as I am afraid I may not be following stage one correctly. Thanks!

Karina, this recipe is for stages 2 and 3 of the Perfect 10 diet.

I thought it wasn't so much about the calories but getting good foods into your body. This breakfast has all the nutrients to keep one going all morning without a need for snacks. Avocadoes are very filling. The book talks about getting past watching the calories. Good luck!
